Gator Chowder

Wowza.....did this turn out good!!!!

(You will need to pay attention to the seasoning and adjust to what you like)

2 pounds chopped gator meat
1 pound bacon, finely chopped
2 ounces chopped garlic
2 cups each of diced onions, carrots, celery, and green peppers
2 pounds washed and diced potatoes (skin on)
8 cups diced tomatoes
1-46 ounce can clam juice
1 gallon water (or fish stock)
1/2 pound butter
approx 1 pound flour
4 bay leaf
3 ounces tomato paste
1 bottle of your favorite hot sauce
Salt and pepper to taste
In a large stock pot over medium heat, render the bacon until crisp. Add onions, carrots, celery, garlic and green peppers. Cook until tender. Add butter and melt. Whisk in flour to make a roux. Cook for 10 minutes, making sure all bacon fat and butter is absorbed by the flour (adjust flour if necessary). Add clam juice, water and diced tomatoes. Simmer and add potatoes, gator meat, hot sauce and bay leaf. Simmer until potatoes are tender. Adjust seasoning with salt and pepper.

Sounds interesting and makes my mouth water. I'm thinking in my case though, that gator meat might be a little hard to come by. ;)

I forgot one thing......I added several cups of rice to this recipe to thicken it up...like a jambalaya
